Having trouble thinking of quick meals when your schedule is tight? Money kinda tight too?
Have you looked through Pinterest recipes and thought “Wow, that’s a lot of work.” Well that is where I’m at more often than not. My family is spoiled and trained to NEED dinner served by 530pm or the walls will crumble down.
My philosophy is: if it costs more than $10 or if it takes more than 20-30 minutes (unless it is a crock pot meal) I am not making it.
Here’s some recipe ideas from my “go to meal vat”. They take just as much time as throwing in a frozen pizza but are more rounded meals. Each has a serving of protein, starch and vegetables. Add a glass of milk and some fruit for dessert and you’ve got yourself a picture perfect meal straight from the Food Pyramid!
Yah sure, I buy frozen vegetables rather than fresh most of the time. Yes there are jarred/canned sauces with preservatives at times. But the big picture here is a solid, wholesome meal made by Mom (kids usually help too) that we can all sit around and enjoy together after our hard long days.
They are very easy recipes to substitute if you want to. Instead of ground beef, do ground turkey. Instead of Egg noodles, do whole wheat pasta. Instead of sour cream or mayo, do plain Greek yogurt. You get the picture.
Poor Folks Stroganoff
1 lb ground beef
1 package of wide egg noodles
1 can of cream of mushroom soup
1 cups of sour cream
1 bag of frozen vegetables of choice
Boil noodles. Brown ground beef and drain. Add soup and sour cream to cooked ground beef until hot. Cook vegetables according to your liking.
Serve ground beef mixture over noodles with vegetables on the side.
Chicken Stir Fry
3 boneless/skin-less chicken breasts
White or Brown Minute Rice
Frozen bag of stir fry vegetables
1 jar stir fry sauce
Cube chicken breasts and cook until browned. Microwave frozen vegetables until hot. Combine with chicken. Add sauce and cook until hot. Cook rice according to package instructions. Serve chicken mixture over rice.
Ground Beef Surprise (Goulash)
1 lb ground beef
1 package shells and cheese macaroni and cheese
1 can of petite diced tomatoes
1 can of cream style corn
Brown ground beef and drain. Cook mac and cheese according to package directions. Combine cooked ground beef, mac and cheese, tomatoes and corn. Serve.
BLT’s (could be our favorite)
1 package of bacon
Sliced Cheddar cheese
Bake fries according to package directions. Cook bacon until crisp. Slice tomato and pull apart lettuce. Build sandwich with bread, bacon, tomato, lettuce, cheese and mayo. Serve with fries.
Pork chops/Mashed Potatoes/Veggies
1-2 packages of boneless pork chops
2 tbsp. Grill Mate seasoning
2 tbsp. olive/vegetable oil
Choice of frozen/fresh vegetables
Choice of potatoes
4 tbsp. Butter
½ c Sour Cream
½ tbsp. Chives
¼ c milk
Potatoes: (Could cut down the time with boxed potatoes if desired) Chop potatoes into cubes leaving skin intact. Add to a pot with hot water on high. Let boil for 15 min or until potatoes are soft. Add butter, sour cream, chives and milk. Mash until smooth and all ingredients are combined.
Chops: Heat George Forman type of grill. Combine oil and seasoning. Dip pork chops in mixture and place on Forman grill for 7-8 minutes.
Cook vegetables to your liking and serve with chops and potatoes.
It doesn’t have to cost a lot or take up too much time to put a good meal on the table! Try it.
